Blissful Banana & Blueberry loaf

So last week I decided I needed to start eating more fruit- y’know for the vitamins, seen as we are now right in the middle of cold season. Anyway, long story short I bought all this fruit and forgot to eat it = over ripe bananas. Naturally I saw this as a prime opportunity to BAKE (imitating Sue Perkins- from GBBO for those of you that don’t get it)

I thought I’d make muffins, seen as I shared my awesome apple, cinnamon and pecan loaf with you recently BUT our muffin tray seems to have done a disappearing act so another loaf it had to be- I hope that’s not a problem for you lovelies.

Here goes…



  • 100g Butter (Room temperature)
  • 100g Caster Sugar
  • 75g Light Muscovado Sugar
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 225g Self-Raising Flour
  • 1 tsp. Baking Powder
  • 2 tbsp. Milk
  • 4 Very Ripe Bananas (small)
  • 150g Blueberries
  • A handful of oats
  • A handful of Demerara sugar


  1. Preheat the oven to 180ºC/160ºC Fan
  2. Cream the butter and sugars together in a mixing bowl
  3. Add the eggs, vanilla extract, flour and baking powder and mix together
  4. Add the mashed banana and two thirds of the blueberries to the bowl and combine
  5. Chop the final 50g of blueberries into halves then add them to the bowl and mix- If you’re worried about them sinking you can always toss them in a little flour to coat before adding to the bowl
  6. Grease and line a 2lb loaf tin and add the mixture
  7. Sprinkle the oats and Demerara over the top of the mixture (to create a yummy crunchy topping!)
  8. Put the loaf tin in the oven for around 1 hour and 10 mins (you know the drill, until its springy to the touch/ a skewer comes out clean)
  9. Once cooked, remove from the oven and leave to cool in the tin. (It also makes a delicious pudding when eaten warm with a nice dollop of custard, but can be difficult to cut until its cooled down!)




Looks delicious right? Safe to say it never lasts long in our house!
